Description

Delicious banana cupcakes topped with creamy vanilla frosting and garnished with banana chips.


Ingredients

  • 13 ounces vanilla cake mix (1 box)
  • 3 ripe bananas
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup unsalted butter (at room temperature)
  • 1 pound powdered sugar
  • 1 tablespoon vanilla extract
  • 3 tablespoons heavy cream (or whole milk)
  • 12 banana chips

Instructions

  1. Preheat the oven to 350 degrees F. Line 12 muffin tins with cupcake liners.
  2. Peel the bananas and add them to a medium mixing bowl. Use a fork to mash the bananas. Add the cake mix, eggs, and vegetable oil to the bowl. Mix until just combined.
  3. Divide the cupcake batter evenly between the lined muffin tin cups, filling each about ¾ full.
  4. Bake for 20-24 minutes, or until tops gently spring back when touched and a toothpick inserted in the center comes out clean.
  5. Remove from the oven and carefully transfer the cupcakes to a wire rack to cool completely.
  6. Beat the butter in a large mixing bowl for 1 minute with a hand mixer on medium speed. Add the powdered sugar in 1 cup at a time, mixing after each addition. Scrape the sides of the bowl as needed.
  7. Add vanilla and heavy cream to the bowl, and beat until smooth. If needed, add more cream to thin the frosting as desired.
  8. Transfer the frosting to a piping bag fitted with your preferred piping tip. Frost the cupcakes and then garnish each one with a banana chip.
