Description

Delicious chocolate truffles infused with Baileys Irish Cream, perfect for a sweet treat or dessert.


Ingredients

Scale
  • 2 cups semisweet chocolate chips
  • 3 tbsp heavy cream
  • ¼ cup Bailey’s Irish Cream liqueur
  • pinch kosher salt
  • 1½ cups white candy melts
  • to taste cinnamon-sugar (for sprinkling)

Instructions

  1. Line a baking sheet with parchment paper; set aside.
  2. Set up a double boiler by placing a medium heatproof bowl over a small pot of simmering water. Add chocolate chips and heavy cream and stir until melted.
  3. Take off heat. Add in the Baileys and salt; stir until combined and smooth. Refrigerate until chocolate mixture is firm enough to roll into balls, 1-2 hours.
  4. Using a small cookie scoop, roll the chocolate into 1 inch balls, then place on the prepared baking sheet.
  5. In a medium microwave-safe heatproof bowl, microwave candy melts according to package directions until melted and smooth (but not hot).
  6. Using a fork, dip each truffle into white chocolate, turning to coat. Tap off any excess chocolate on the side of the bowl.
  7. Place back on baking sheet and sprinkle with cinnamon-sugar.
  8. Chill in the fridge for about 10 minutes to set. Refrigerate until ready to serve.

Notes

  • For best results, allow the truffles to firm up in the refrigerator for the full 2 hours if time permits.
  • Experiment with different toppings like crushed nuts or sprinkles for added flavor and texture.
