This creamy cheesecake topped with fresh berries is a delightful dessert for any occasion.

- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup heavy cream
- 1 ½ cups graham cracker crumbs
- ¼ cup melted butter
- ¼ cup granulated sugar (for crust)
- 1 cup fresh strawberries, halved
- ½ cup fresh blueberries
- Mint leaves for garnish
- ½ cup berry jam or preserve
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar.
- Press the mixture firmly into the bottom of a springform pan.
- Bake for 10 minutes. Remove from oven and let cool.
- In a large mixing bowl, beat cream cheese until smooth.
- Gradually add 1 cup sugar and vanilla extract, mixing well.
- Add eggs one at a time, beating on low speed until just blended.
- Mix in the heavy cream until the mixture is smooth and creamy.
- Pour the cheesecake filling over the crust.
- Place the springform pan in a larger baking pan. Fill the larger pan with hot water halfway up the sides of the springform pan.
- Bake for 55–60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, spread berry jam over the top of the cheesecake.
- Arrange strawberries and blueberries on top.
- Garnish with fresh mint leaves.
