Description

This creamy cheesecake topped with fresh berries is a delightful dessert for any occasion.


Ingredients

  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • ¼ cup granulated sugar (for crust)
  • 1 cup fresh strawberries, halved
  • ½ cup fresh blueberries
  • Mint leaves for garnish
  • ½ cup berry jam or preserve

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Bake for 10 minutes. Remove from oven and let cool.
  5. In a large mixing bowl, beat cream cheese until smooth.
  6. Gradually add 1 cup sugar and vanilla extract, mixing well.
  7. Add eggs one at a time, beating on low speed until just blended.
  8. Mix in the heavy cream until the mixture is smooth and creamy.
  9. Pour the cheesecake filling over the crust.
  10. Place the springform pan in a larger baking pan. Fill the larger pan with hot water halfway up the sides of the springform pan.
  11. Bake for 55–60 minutes, or until the center is set but still slightly jiggly.
  12. Turn off the oven and leave the cheesecake inside for 1 hour.
  13. Remove from oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  14. Before serving, spread berry jam over the top of the cheesecake.
  15. Arrange strawberries and blueberries on top.
  16. Garnish with fresh mint leaves.
