Instructions

  1. Prepare the Onions and Cheese: Peel the onions and slice them into 1/2-inch thick rings. Separate the rings carefully. Cut the mozzarella slices to fit inside the onion rings. Place the cheese slices between pairs of onion rings, creating a sandwich.
  2. Prepare the Batter: In a bowl, mix the flour, baking powder, salt, and pepper. In another bowl, whisk the eggs and milk together.
  3. Coat the Onion Rings: Dip each onion ring sandwich into the flour mixture, ensuring it’s fully coated. Then, dip it into the egg mixture, allowing any excess to drip off. Finally, coat the ring with breadcrumbs, pressing gently to ensure they stick. Repeat the process for each ring.
