A delicious and creamy cheesy hash brown casserole that is perfect for any occasion.
Ingredients

- 2 pounds frozen hash brown potatoes (thawed)
- 2 cups sour cream
- 1 can cream of chicken soup (10 oz)
- 2 cups shredded cheddar cheese
- 1/2 cup melted butter (plus 2 tablespoons for topping)
- 1/2 cup chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups crushed cornflakes or Ritz crackers
Instructions
- Preheat oven to 350°F and grease a 9×13 inch baking dish.
- In a large bowl, combine sour cream, cream of chicken soup, cheddar cheese, 1/2 cup melted butter, onion, garlic powder, salt, and pepper. Mix until smooth.
- Fold in thawed hash browns until evenly coated.
- Spread mixture into prepared baking dish.
- Mix crushed cornflakes or Ritz crackers with 2 tablespoons melted butter. Sprinkle over top.
- Bake uncovered for 45–50 minutes or until golden and bubbly.
- Let rest a few minutes before serving.
Notes
- This casserole can be prepared a day in advance and baked before serving.
- Great for brunch or potluck gatherings.
