Description

A delicious cheesy meatloaf served with creamy mashed potatoes.


Ingredients

  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • 2 large eggs

  • 2 tablespoons brown sugar
  • 1 teaspoon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup butter
  • 1 cup milk (for mashed potatoes)
  • Fresh thyme for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, cheese, eggs, milk, onion, garlic, salt, and pepper. Mix well until fully incorporated.
  3. Shape the Meatloaf: Transfer the meat mixture into a greased loaf pan and shape it into a loaf.
  4. Prepare Glaze: In a small bowl, mix the ketchup, brown sugar, mustard, and Worcestershire sauce. Spread this glaze evenly over the top of the meatloaf.
  5. Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (71°C).
  6. Prepare Mashed Potatoes: While the meatloaf is baking, boil the peeled and cubed potatoes in a large pot of salted water until tender (about 15 minutes). Drain and return to the pot.
  7. Mash the Potatoes: Add butter and milk to the potatoes. Mash until creamy and smooth. Season with salt and pepper to taste.
  8. Serve: Slice the meatloaf and serve it over a bed of mashed potatoes. Garnish with fresh thyme if desired.

  • For a spicier kick, add a teaspoon of cayenne pepper to the meat mixture.
  • To avoid a dry meatloaf, ensure not to overmix the ingredients.
