- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon mustard
- 1 tablespoon Worcestershire sauce
- 2 pounds potatoes, peeled and cubed
- 1/2 cup butter
- 1 cup milk (for mashed potatoes)
- Fresh thyme for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, cheese, eggs, milk, onion, garlic, salt, and pepper. Mix well until fully incorporated.
- Shape the Meatloaf: Transfer the meat mixture into a greased loaf pan and shape it into a loaf.
- Prepare Glaze: In a small bowl, mix the ketchup, brown sugar, mustard, and Worcestershire sauce. Spread this glaze evenly over the top of the meatloaf.
- Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (71°C).
- Prepare Mashed Potatoes: While the meatloaf is baking, boil the peeled and cubed potatoes in a large pot of salted water until tender (about 15 minutes). Drain and return to the pot.
- Mash the Potatoes: Add butter and milk to the potatoes. Mash until creamy and smooth. Season with salt and pepper to taste.
- Serve: Slice the meatloaf and serve it over a bed of mashed potatoes. Garnish with fresh thyme if desired.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper to the meat mixture.
- To avoid a dry meatloaf, ensure not to overmix the ingredients.
- Let the meatloaf rest for 10 minutes before slicing to retain moisture.
