Description

This cheesy stuffed meatloaf is a delightful dish that combines ground beef with a rich filling of mozzarella and cheddar cheeses, vegetables, and spices, all baked to perfection.

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, finely chopped
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, combine ground beef, eggs, breadcrumbs, milk, garlic, salt, pepper, oregano, and Worcestershire sauce. Mix well until all ingredients are thoroughly combined.

  3. In a separate bowl, mix together the shredded mozzarella and cheddar cheeses, diced bell peppers, and chopped onion.

  4. On a piece of parchment paper, flatten the meat mixture into a large rectangle. Spread the cheese and vegetable filling evenly over the meat, leaving a small border around the edges. Carefully roll the meatloaf, using the parchment paper to help lift and roll, encasing the filling completely.

  5. Transfer the meatloaf to a greased baking dish. Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and a thermometer reads an internal temperature of 160°F (71°C).

  6. In the last 10 minutes of baking, sprinkle additional cheese on top if desired, allowing it to melt and bubble.

  7. Once baked, remove from oven and let it rest for a few minutes. Garnish with chopped green onions before slicing and serving.
