Ingredients
- 2 lbs ground beef
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup bell peppers, diced
- 1/2 cup onion, finely chopped
- 2 eggs
- 1 cup breadcrumbs
- 1/4 cup milk
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 tablespoon Worcestershire sauce
- Chopped green onions for garnish

Preheat your oven to 375°F (190°C).

In a large bowl, combine ground beef, eggs, breadcrumbs, milk, garlic, salt, pepper, oregano, and Worcestershire sauce. Mix well until all ingredients are thoroughly combined.

In a separate bowl, mix together the shredded mozzarella and cheddar cheeses, diced bell peppers, and chopped onion.

On a piece of parchment paper, flatten the meat mixture into a large rectangle. Spread the cheese and vegetable filling evenly over the meat, leaving a small border around the edges. Carefully roll the meatloaf, using the parchment paper to help lift and roll, encasing the filling completely.

Transfer the meatloaf to a greased baking dish. Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and a thermometer reads an internal temperature of 160°F (71°C).

In the last 10 minutes of baking, sprinkle additional cheese on top if desired, allowing it to melt and bubble.
