Ingredients
Scale
- 1 lb ground beef
- 1 cup breadcrumbs
- 1 large egg
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese, diced
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Mix Meatloaf: In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, parsley, salt, pepper, and Worcestershire sauce. Mix until well combined.
- Prepare Minis: Divide the mixture into 12 equal portions. Flatten each portion into a mini patty.
- Add Cheese: Place a small amount of mozzarella cheese in the center of each patty. Form the meat around the cheese to make a mini loaf, ensuring the cheese is fully enclosed.
- Place in Tin: Arrange the mini meatloaves in a muffin tin or on a baking sheet.
- Top with Ketchup and Cheddar: Spread a small spoonful of ketchup on top of each mini loaf and sprinkle with shredded cheddar cheese.
- Bake: Place in the preheated oven and bake for 20-25 minutes or until the meat is cooked through and cheese is melted and bubbly.
Notes
- For added flavor, consider using a mix of meats like beef and pork.
- Experiment with different cheeses like pepper jack or gouda for variation.
- Ensure the cheese is fully enclosed to prevent it from leaking out during baking.
- Serve with a side of mashed potatoes or a green salad for a complete meal.
