- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- ½ cup chopped nuts (optional)
Instructions
- Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, and then mix in the vanilla extract until combined.
- In another bowl, whisk together the flour, baking soda, and salt until well blended.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the rolled oats until evenly distributed throughout the dough.
- Mix in the semi-sweet chocolate chips and optional nuts until all ingredients are well incorporated.
- Using a cookie scoop or tablespoon, drop generous portions of dough onto the prepared baking sheet, leaving space between each cookie.
- Place the baking sheet in the preheated oven and bake for 10–12 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.
Notes
- Cookies can be stored in an airtight container for up to one week.
- For chewier cookies, slightly underbake them.
- Feel free to add your favorite mix-ins such as dried fruit or different types of chocolate chips.
