Description

A comforting chicken noodle casserole made with tender chicken, creamy soup, and topped with buttery crushed crackers.


Ingredients

  • 2 cups diced cooked chicken
  • 10 ounces cream of chicken soup
  • 6 ounces egg noodles, cooked and drained
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 16 Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F. Spray an 8×8-inch or 2-quart baking dish with cooking spray and set aside.
  2. In a large bowl, stir together 2 cups diced cooked chicken, 10 ounce can cream of chicken soup, 6 ounces egg noodles, cooked and drained, 1 cup frozen mixed vegetables, 1 cup shredded cheddar cheese, 1/2 cup sour cream, 1/2 cup milk, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper until combined well.
  3. Add the mixture to the prepared baking dish.
  4. In a small bowl, stir together 16 Ritz crackers, crushed and 2 tablespoons butter, melted. Add the mixture to the top of the casserole.
  5. Bake, uncovered, for 30-35 minutes until lightly browned on top and bubbling along the edges. Serve immediately.

Notes

  • This casserole can be made ahead of time and refrigerated before baking.
  • Feel free to substitute the mixed vegetables with peas and carrots if preferred.
  • For a creamier texture, increase the amount of sour cream or cream of chicken soup.
