Ingredients

- 200g plain flour
- 200g granulated sugar
- 75g cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp bicarbonate of soda
- 1 tsp salt
- 2 large eggs
- 240ml whole milk
- 120ml vegetable oil
- 2 tsp vanilla extract
- 240ml boiling water
- 400g sweetened condensed milk
- 1 tsp peppermint extract
- Green food colouring (optional)
- 200g dark chocolate, chopped
- 200ml double cream
- Whipped cream for garnish
- Chocolate shavings for garnish
- Fresh mint leaves for garnish
Instructions
- For the Chocolate Cake, mix all the dry ingredients in a bowl.
- Add eggs, milk, oil, and vanilla extract, and mix until smooth.
- Gradually add boiling water and mix well.
- Pour batter into a greased cake pan and bake as directed.
- For the Mint Filling, combine sweetened condensed milk, peppermint extract, and green food coloring.
- Once the cake has cooled, poke holes and fill with the mint mixture.
- For the Chocolate Ganache Topping, heat double cream and pour over chopped chocolate, stirring until smooth.
- Spread ganache over the cake and let set.
- Garnish with whipped cream, chocolate shavings, and fresh mint leaves.
