Description

A delicious Chocolate Mint Poke Cake, perfect for chocolate lovers!


Ingredients

Scale
  • 200g plain flour
  • 200g granulated sugar
  • 75g cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp bicarbonate of soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml whole milk
  • 120ml vegetable oil
  • 2 tsp vanilla extract
  • 240ml boiling water
  • 400g sweetened condensed milk
  • 1 tsp peppermint extract
  • Green food colouring (optional)
  • 200g dark chocolate, chopped
  • 200ml double cream
  • Whipped cream for garnish
  • Chocolate shavings for garnish
  • Fresh mint leaves for garnish

Instructions

  1. For the Chocolate Cake, mix all the dry ingredients in a bowl.
  2. Add eggs, milk, oil, and vanilla extract, and mix until smooth.
  3. Gradually add boiling water and mix well.
  4. Pour batter into a greased cake pan and bake as directed.
  5. For the Mint Filling, combine sweetened condensed milk, peppermint extract, and green food coloring.
  6. Once the cake has cooled, poke holes and fill with the mint mixture.
  7. For the Chocolate Ganache Topping, heat double cream and pour over chopped chocolate, stirring until smooth.
  8. Spread ganache over the cake and let set.
  9. Garnish with whipped cream, chocolate shavings, and fresh mint leaves.
