Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Dough: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  3. Prepare the Filling: In a small bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Assemble the Cookies: Divide the dough into two portions. Roll out one portion between two sheets of parchment paper to form a rectangle about 1/4 inch thick. Spread half of the cream cheese mixture over the rolled dough. Carefully roll the dough into a log, starting from one of the long edges, using the parchment to help. Repeat with the second portion of dough and remaining filling.
  5. Chill the Dough: Wrap the logs in plastic wrap and chill in the refrigerator for at least 1 hour, until firm.
  6. Slice and Bake: Once chilled, slice the logs into 1/4-inch thick rounds. Place the cookies on a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until the edges are set.
