A delicious and hearty pasta dish made with penne, sausage, sweet potatoes, and spinach.

- 8 oz penne pasta
- 1 lb Italian sausage (sweet or spicy)
- 2 cups sweet potatoes (peeled and diced)
- 2 cups fresh spinach
- 1 cup heavy cream
- 4 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese (plus more for garnish)
- 1 medium yellow onion (chopped)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sliced sausage, cooking until browned and onions are translucent.
- Stir in minced garlic and diced sweet potatoes; sauté for about 5 minutes until fragrant.
- Boil penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- Pour heavy cream into the skillet with the sausage mixture, stirring well. Let it simmer for 3-4 minutes until slightly thickened.
- Add cooked pasta and reserved pasta water; mix thoroughly while folding in fresh spinach until wilted.
- Finish by sprinkling grated Parmesan cheese into the dish before serving hot.
