  • 1 lb Italian sausage (sweet or spicy)
  • 2 cups sweet potatoes (peeled and diced)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese (plus more for garnish)
  • 1 medium yellow onion (chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and sliced sausage, cooking until browned and onions are translucent.
  2. Stir in minced garlic and diced sweet potatoes; sauté for about 5 minutes until fragrant.
  3. Boil penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  4. Pour heavy cream into the skillet with the sausage mixture, stirring well. Let it simmer for 3-4 minutes until slightly thickened.
  5. Add cooked pasta and reserved pasta water; mix thoroughly while folding in fresh spinach until wilted.
  6. Finish by sprinkling grated Parmesan cheese into the dish before serving hot.
