Instructions
- Marinate Chicken: In a bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 1 hour or overnight.
- Prepare Coating: In a shallow dish, mix flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Prepare Egg Wash: In another bowl, whisk together the eggs.
- Coat the Chicken: Remove chicken from buttermilk. Dip each piece into the flour mixture, then into the egg wash, and back into the flour mixture, pressing to adhere.
- Fry the Chicken: Heat about 2 inches of vegetable oil in a deep frying pan over medium-high heat to 350°F (175°C). Carefully add a few chicken pieces at a time without overcrowding. Fry for 4-5 minutes per side, or until golden brown and cooked through.
- Drain and Serve: Remove chicken bites from oil and drain on a paper towel-lined plate. Serve hot with your favorite dipping sauce.
