Description

A comforting split pea soup made with tender peas, vegetables, and ham.


Ingredients

Scale
  • 1 lb split green peas (dried, green or yellow peas)
  • 3 medium carrots (sliced)
  • 3 ribs celery (sliced)
  • 1 large onion ( diced)
  • 1 lb potatoes (optional, cubed)
  • 1 ham bone (with meat)
  • 2 bay leaves
  • 1 Tbsp garlic (minced)
  • 1½ tsp oregano (or thyme, or herbes de provence)
  • ½ tsp each, salt & pepper (to taste)
  • 5 cups chicken broth
  • 2 cups water (up to 4 cups, depending on desired consistency)

Instructions

  1. Add the rinsed 1 lb split green peas, 1 ham bone, 3 medium carrots, 3 ribs celery, 1 large onion, optional 1 lb potatoes, 1 Tbsp garlic, ½ tsp each, salt & pepper, 1½ tsp oregano, and 2 bay leaves to your slow cooker.
  2. Pour in the 5 cups chicken broth and 2 cups water. Stir to combine.
  3. Cover and cook on high for 4-5 hours or on low for 6-8 hours until the peas are soft and broken down.
  4. Remove the ham bone and bay leaves. Pull the meat off the bone, dice it, and discard the bone and leaves.
  5. Use a potato masher to mash the peas to your desired consistency. Return the ham to the pot, stir, and serve warm.

Notes

  • For a thicker soup, use less water.
  • This soup freezes well; just thaw and reheat when you’re ready to enjoy it.
