Description
A comforting split pea soup made with tender peas, vegetables, and ham.
Ingredients
Scale
- 1 lb split green peas (dried, green or yellow peas)
- 3 medium carrots (sliced)
- 3 ribs celery (sliced)
- 1 large onion ( diced)
- 1 lb potatoes (optional, cubed)
- 1 ham bone (with meat)
- 2 bay leaves
- 1 Tbsp garlic (minced)
- 1½ tsp oregano (or thyme, or herbes de provence)
- ½ tsp each, salt & pepper (to taste)
- 5 cups chicken broth
- 2 cups water (up to 4 cups, depending on desired consistency)
Instructions
- Add the rinsed 1 lb split green peas, 1 ham bone, 3 medium carrots, 3 ribs celery, 1 large onion, optional 1 lb potatoes, 1 Tbsp garlic, ½ tsp each, salt & pepper, 1½ tsp oregano, and 2 bay leaves to your slow cooker.
- Pour in the 5 cups chicken broth and 2 cups water. Stir to combine.
- Cover and cook on high for 4-5 hours or on low for 6-8 hours until the peas are soft and broken down.
- Remove the ham bone and bay leaves. Pull the meat off the bone, dice it, and discard the bone and leaves.
- Use a potato masher to mash the peas to your desired consistency. Return the ham to the pot, stir, and serve warm.
Notes
- For a thicker soup, use less water.
- This soup freezes well; just thaw and reheat when you’re ready to enjoy it.
