  • 1 package vanilla sandwich cookies
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups white chocolate chips or chunks
  • 1 cup marshmallow fluff
  • 1 cup fine sea salt or sanding sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mats.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the eggs one at a time, then add the vanilla extract. Continue mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing just until combined.
  5. Take one chocolate sandwich cookie and one vanilla sandwich cookie. Carefully split each in half to remove the fillings. Combine the fillings with marshmallow fluff until smooth.
