Delicious puff pastry bites filled with a creamy béchamel, ham, and cheese.

- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups whole milk
- 1 tablespoon whole grain Dijon mustard

- 14 oz puff pastry
- 1 cup diced ham
- 1 cup Gruyère cheese
- 1 large egg
Instructions
- Preheat your oven to 425ºF (220ºC). Line a baking sheet with parchment paper.
- In a medium saucepan, melt butter over medium heat. Whisk in flour, stirring for about 3 minutes.
- Gradually add milk, whisking until thickened (roughly 5 minutes). Stir in mustard, salt, and pepper. Set aside.
- Roll out puff pastry until it measures approximately 13 x 15 inches and cut out 2-inch circles.
- Brush edges with beaten egg, place béchamel, ham, and cheese in the center, fold and seal.
- Bake for 15 minutes or until golden brown. Let cool slightly before serving.
Notes
- Can use salted butter but adjust salt in the sauce.
- No substitutions required for the flour.
- Non-dairy alternatives can be used for the milk.
- Regular mustard can be used for a milder taste.
- Gluten-free puff pastry available.
- Turkey or sautéed mushrooms can be used instead of ham for a vegetarian option.
- Cheddar or Swiss cheese can be used instead of Gruyère.
