Description

A delightful raspberry jelly dessert topped with whipped cream and raspberry jam.

Ingredients

Scale
  • 2 cups fresh raspberries
  • 1 package (3 oz) raspberry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raspberry jam for topping

Instructions

  1. Prepare the Gelatin:
    • In a large bowl, dissolve the raspberry-flavored gelatin in 1 cup of boiling water. Stir well until completely dissolved.
    • Add 1 cup of cold water to the gelatin mixture and stir to combine.
  2. Chill the Gelatin:
    • Gently fold in the fresh raspberries into the gelatin mixture.
    • Pour the mixture into a mold or a serving dish.
    • Refrigerate for at least 4 hours or until firmly set.
  3. Whip the Cream:
    • In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
    • Using an electric mixer, whip the cream until soft peaks form.
  4. Assemble the Dessert:
    • Once the gelatin is firm, remove it from the mold onto a serving plate.
    • Spread the whipped cream over the top of the gelatin.
    • Drizzle raspberry jam over the whipped cream for a festive look.

Notes

  • Ensure the gelatin is completely set before attempting to remove it from the mold to maintain its shape.
  • For extra flavor, you can mix a tablespoon of raspberry liqueur into the gelatin before adding cold water.
  • Customize the dessert by incorporating other berries or mint leaves for garnish.
