Description

A simple and delicious garlic butter broccoli recipe made in the microwave.


Ingredients

Scale
  • 9 ounces broccoli florets (about 4 cups)
  • ¼ cup water
  • 3 tablespoons unsalted butter
  • 1 garlic clove, minced
  • ½ tablespoon fresh lemon juice
  • 1 tablespoon grated parmesan (plus more for topping)
  • ¼ teaspoon oregano
  • ¼ teaspoon kosher salt

Instructions

  1. If the broccoli florets are very large, cut them into smaller florets.
  2. Place the broccoli florets in a large microwave-safe bowl. Pour the water over the broccoli. Cover the bowl with a microwave-safe plate. It should cover the entire top of the bowl.
  3. Place the bowl into the microwave and microwave for 3 minutes. Use a slotted spoon to stir the broccoli and cook for 1 more minute. The broccoli should be tender yet firm, not mushy.
  4. Remove the broccoli from the microwave and remove the plate from the top.
  5. In a medium bowl, combine the unsalted butter and minced garlic. Microwave until the butter is hot and melted, but not overflowing, about 1 minute.
  6. Add the kosher salt, oregano, lemon juice, and grated parmesan to the melted butter.
  7. Drain any excess liquid from the broccoli. Add the melted butter mixture and stir to coat. Serve with a sprinkle of grated parmesan and kosher salt.

Notes

  • For an even richer flavor, add more grated parmesan on top before serving.
