Description
Delicious homemade potato pancakes, crispy on the outside and tender on the inside.
Ingredients

- 4 medium Russet potatoes
- 1 small yellow onion
- 1 large egg
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
Instructions
- Peel and grate the potatoes. Immediately squeeze out as much liquid as possible using a clean kitchen towel.
- Grate the onion and combine with the potatoes.
- In a large bowl, mix the grated potatoes and onion with egg, flour, salt, and pepper until well combined.
- Heat oil in a skillet over medium to medium-high heat.
- Drop spoonfuls of the mixture into the hot oil, flatten into pancakes, and fry for 3–4 minutes per side until golden and crispy.
- Transfer to paper towels to drain. Serve hot with sour cream, applesauce, or toppings of choice.
Notes
- For extra flavor, consider adding garlic or herbs to the potato mixture.
- You can use a food processor to grate the potatoes and onion quickly.
