Description

Ingredients

  • 4 cups Low sodium chicken broth (homemade is also great)
  • 1 pound Boneless, skinless chicken thighs or breasts (for tender chicken)
  • 2 inches Fresh ginger (minced finely)
  • 34 cloves Garlic (minced)
  • 2 tablespoons Soy sauce (for savory depth)
  • 8 ounces Dried noodles (egg noodles or your favorite quick-cooking variety)
  • 2 Scallions (chopped, for garnish)
  • 1 teaspoon Sesame oil (for finishing)

Instructions

  1. Finely mince your fresh ginger and garlic. Gently sauté them in your soup pot for about a minute until fragrant, but don’t let them brown.
  2. Add chicken broth and chicken pieces to the pot. Simmer gently until the chicken is cooked through, about 10-15 minutes.
  3. Stir in soy sauce. Let the broth simmer for another 5 minutes to meld those wonderful ginger and garlic notes.
  4. Add your chosen noodles directly to the simmering broth during the last few minutes of cooking, ensuring they reach your desired tenderness.
  5. Stir in chopped scallions and a drizzle of sesame oil. Taste and adjust seasoning if needed before ladling into bowls.
