Description
Delicious gluten-free bites made with yogurt and coconut sugar, perfect for a quick snack!
Ingredients

- 1 cup gluten-free all purpose flour (with xanthan gum)
- 1 cup greek yogurt (can use a dairy-free greek yogurt style yogurt)
- 1 tbsp honey
- 2 tsp baking powder
- 3/4 tsp salt
- 2 tbsp grass-fed butter, vegan butter, or coconut oil OR egg wash (just whisk 1 egg, then brush the bites!)
- 1/3 cup coconut sugar
- 1 1/2 tbsp cinnamon
Instructions
- Preheat oven to 375°F and line a rimmed baking sheet with parchment paper.
- In a large bowl add flour, baking powder and salt and mix well. Add the yogurt and using a stand mixer or hand mixer, mix for 2-3 minutes or until well combined. When it’s ready, the dough will form into a ball and pull away from the mixer.
- Place dough on a parchment-lined rolling mat or flat surface and roll into a ball and knead about 10 times.
- Grab bits of dough and roll/shape each piece into a bite. Then place on the prepared baking sheet. Use a brush to generously brush melted butter or coconut oil on the top and sides of the bites. Alternatively, you can brush with egg wash. Sprinkle with coarse salt.
- Bake on the middle rack of the oven until golden about 18-22 minutes or until golden and baked through to your liking.
- If doing the cinnamon sugar coating, combine the cinnamon and coconut sugar in a large bowl. Brush the bites with a little more melted butter or oil and add to the bowl. Toss them well, evenly coating each bite.
- Enjoy immediately for best flavor and texture!
Notes
- For a dairy-free version, use dairy-free yogurt.
- Make sure to use gluten-free flour to keep the recipe gluten-free.
