Gluten-Free Yogurt Bites

Description

Delicious gluten-free bites made with yogurt and coconut sugar, perfect for a quick snack!


Ingredients

Scale
  • 1 cup gluten-free all purpose flour (with xanthan gum)
  • 1 cup greek yogurt (can use a dairy-free greek yogurt style yogurt)
  • 1 tbsp honey
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 2 tbsp grass-fed butter, vegan butter, or coconut oil OR egg wash (just whisk 1 egg, then brush the bites!)
  • 1/3 cup coconut sugar
  • 1 1/2 tbsp cinnamon

Instructions

  1. Preheat oven to 375°F and line a rimmed baking sheet with parchment paper.
  2. In a large bowl add flour, baking powder and salt and mix well. Add the yogurt and using a stand mixer or hand mixer, mix for 2-3 minutes or until well combined. When it’s ready, the dough will form into a ball and pull away from the mixer.
  3. Place dough on a parchment-lined rolling mat or flat surface and roll into a ball and knead about 10 times.
  4. Grab bits of dough and roll/shape each piece into a bite. Then place on the prepared baking sheet. Use a brush to generously brush melted butter or coconut oil on the top and sides of the bites. Alternatively, you can brush with egg wash. Sprinkle with coarse salt.
  5. Bake on the middle rack of the oven until golden about 18-22 minutes or until golden and baked through to your liking.
  6. If doing the cinnamon sugar coating, combine the cinnamon and coconut sugar in a large bowl. Brush the bites with a little more melted butter or oil and add to the bowl. Toss them well, evenly coating each bite.
  7. Enjoy immediately for best flavor and texture!

Notes

  • For a dairy-free version, use dairy-free yogurt.
  • Make sure to use gluten-free flour to keep the recipe gluten-free.
