Description

  • 2 tablespoons fresh parsley (chopped)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: Wash the baby potatoes and cut them in half. Pat them dry with a paper towel to remove excess moisture.
  3. Season Potatoes: In a large mixing bowl, combine the halved potatoes with olive oil, salt, and black pepper. Toss until the potatoes are well coated.
  4. Add Herbs: Add minced garlic, rosemary, and thyme to the bowl. Toss the potatoes again to evenly distribute the herbs.
  5. Arrange on Baking Sheet: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to allow even roasting.
  6. Roast: Place the baking sheet in the oven and roast the potatoes for 25-30 minutes. Halfway through, flip the potatoes to ensure even cooking.
  7. Final Touches: Once the potatoes are golden brown and crispy, remove them from the oven. If desired, sprinkle grated Parmesan cheese over the hot potatoes. Garnish with chopped parsley before serving.
