Description

Delicious grilled chicken skewers served over a fresh salad with a tangy dressing.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 3 tbsp BBQ sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 46 wooden skewers (soaked in water 30 min)
  • 6 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, sliced
  • ½ cup red bell pepper, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup shredded cheddar or Monterey Jack cheese (optional)
  • 3 tbsp olive oil (for dressing)
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & pepper, to taste (for dressing)

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Toss chicken cubes with BBQ sauce, olive oil, smoked paprika, salt, and pepper. Thread onto skewers.
  3. Grill chicken skewers for 8–10 minutes, turning occasionally, until cooked through and slightly charred. Remove from heat.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  5. Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.
  6. Drizzle dressing over salad and toss gently.
  7. Top salad with grilled chicken skewers and sprinkle with shredded cheese if desired. Serve immediately.

Notes

  • Soak skewers in water for at least 30 minutes to prevent burning.
  • Feel free to customize the salad ingredients based on your preference.
