Description
Delicious grilled chicken skewers served over a fresh salad with a tangy dressing.
Ingredients

- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 3 tbsp BBQ sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 4–6 wooden skewers (soaked in water 30 min)
- 6 cups mixed greens (lettuce, spinach, arugula)
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, sliced
- ½ cup red bell pepper, thinly sliced
- ¼ cup red onion, thinly sliced
- ¼ cup shredded cheddar or Monterey Jack cheese (optional)
- 3 tbsp olive oil (for dressing)
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt & pepper, to taste (for dressing)
Instructions
- Preheat grill or grill pan over medium-high heat.
- Toss chicken cubes with BBQ sauce, olive oil, smoked paprika, salt, and pepper. Thread onto skewers.
- Grill chicken skewers for 8–10 minutes, turning occasionally, until cooked through and slightly charred. Remove from heat.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.
- Drizzle dressing over salad and toss gently.
- Top salad with grilled chicken skewers and sprinkle with shredded cheese if desired. Serve immediately.
Notes
- Soak skewers in water for at least 30 minutes to prevent burning.
- Feel free to customize the salad ingredients based on your preference.
