Description

A delicious and healthy ground turkey and sweet potato bake, perfect for a hearty meal.


Ingredients

Scale
  • 1 lb (450 g) ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup bell peppers, diced (red, yellow, or green)
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp chili powder (optional)
  • Salt & black pepper, to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 tbsp olive oil
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tbsp olive oil, salt, pepper, and half of the smoked paprika. Spread on a baking sheet and roast for 20 minutes until tender.
  3. While sweet potatoes roast, heat remaining olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant.
  4. Add ground turkey, cumin, chili powder, smoked paprika, salt, and pepper. Cook until turkey is browned and cooked through, about 5–7 minutes.
  5. In a greased 9×13-inch baking dish, combine roasted sweet potatoes, cooked turkey mixture, and bell peppers. Stir gently.
  6. Top with shredded cheddar cheese if using.
  7. Bake for 10–15 minutes until cheese is melted and golden.
  8. Garnish with fresh parsley or cilantro before serving.
