A delicious and healthy ground turkey and sweet potato bake, perfect for a hearty meal.

- 1 lb (450 g) ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup bell peppers, diced (red, yellow, or green)
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp chili powder (optional)
- Salt & black pepper, to taste
- 1 cup shredded cheddar cheese (optional)
- 2 tbsp olive oil
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with 1 tbsp olive oil, salt, pepper, and half of the smoked paprika. Spread on a baking sheet and roast for 20 minutes until tender.
- While sweet potatoes roast, heat remaining olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant.
- Add ground turkey, cumin, chili powder, smoked paprika, salt, and pepper. Cook until turkey is browned and cooked through, about 5–7 minutes.
- In a greased 9×13-inch baking dish, combine roasted sweet potatoes, cooked turkey mixture, and bell peppers. Stir gently.
- Top with shredded cheddar cheese if using.
- Bake for 10–15 minutes until cheese is melted and golden.
- Garnish with fresh parsley or cilantro before serving.
Notes
- This dish can be served with a side salad for added nutrition.
- Feel free to substitute any of the vegetables based on your preference.
