Description

Delicious and healthy chocolate peanut butter bars made with Medjool dates, pecans, and dark chocolate.


Ingredients

Scale
  • 12 to 15 Medjool dates (pitted)
  • 1/2 cup peanut butter (more for thicker layer)
  • 1 cup pecans
  • 1 1/2 cups dark chocolate chips or chopped chocolate (adjust to taste)
  • Optional: flaky sea salt

Instructions

  1. Line a 9×5 loaf pan with parchment paper. Press pitted dates flat into the bottom in a single layer.
  2. Warm peanut butter for 15–20 seconds in the microwave. Spread evenly over the dates.
  3. Scatter pecans evenly over the peanut butter.
  4. Melt chocolate in 30 second intervals until smooth. Pour over pecans and spread to cover.
  5. Chill in the refrigerator for 10–15 minutes until firm.
  6. Lift out by the parchment and cut into bars. Sprinkle with sea salt if desired.

Notes

  • For a thicker layer of peanut butter, increase the amount used.
  • Chilling the bars longer may help them set better.
