Description
Delicious and healthy chocolate peanut butter bars made with Medjool dates, pecans, and dark chocolate.
Ingredients

- 12 to 15 Medjool dates (pitted)
- 1/2 cup peanut butter (more for thicker layer)
- 1 cup pecans
- 1 1/2 cups dark chocolate chips or chopped chocolate (adjust to taste)
- Optional: flaky sea salt
Instructions
- Line a 9×5 loaf pan with parchment paper. Press pitted dates flat into the bottom in a single layer.
- Warm peanut butter for 15–20 seconds in the microwave. Spread evenly over the dates.
- Scatter pecans evenly over the peanut butter.
- Melt chocolate in 30 second intervals until smooth. Pour over pecans and spread to cover.
- Chill in the refrigerator for 10–15 minutes until firm.
- Lift out by the parchment and cut into bars. Sprinkle with sea salt if desired.
Notes
- For a thicker layer of peanut butter, increase the amount used.
- Chilling the bars longer may help them set better.
