Instructions
- Make the cheesecake filling: In a mixing bowl, combine softened cream cheese, sugar, vanilla extract, and lemon juice. Beat until smooth and fluffy. This is the heart of the dessert—creamy, tangy, and lightly sweet.
- Prepare your wrappers: Lay out your egg roll wrappers on a clean surface. Spoon about 2 tablespoons of cheesecake filling into the center of each one. Top with a spoonful of cherry pie filling.
- Roll them up: Fold in the sides of the wrapper, then roll tightly from the bottom like a burrito. Use a bit of the beaten egg to seal the edges so nothing leaks out during cooking.
- Air fry to golden perfection: Preheat your air fryer to 375°F. Lightly spray the egg rolls with cooking spray and place them in a single layer in the basket. Air fry for 6–8 minutes, flipping halfway, until golden and crisp.
