Ingredients

- 1 lb tomatillos, husked and rinsed
- 2 jalapeños or serrano peppers (adjust to taste)
- 1 small white onion, quartered
- 2 garlic cloves, peeled
- 0 cup fresh cilantro leaves
- 1 lime, juiced
- 0 tsp salt (adjust to taste)
- 1 tbsp olive oil (optional)
Instructions
- Preheat your oven to 425°F (220°C). Place tomatillos, jalapeños, onion, and garlic on a baking sheet and roast for 15–20 minutes, flipping halfway until lightly charred and softened. Let cool slightly.
- Transfer all roasted ingredients to a blender or food processor. Add cilantro, lime juice, and salt. Blend until you reach your desired consistency.
- Adjust flavor by adding more salt, lime juice, or another chili pepper. For smoother texture, add olive oil or a splash of water.
- Let the salsa chill in the refrigerator for at least 30 minutes to let the flavors meld.
- Serve with chips, tacos, grilled meats, eggs, or use as a sauce for enchiladas or bowls.

- Adjust the level of spice based on your preference for heat.
- This salsa can be made a day ahead for even better flavor.
