Description

Learn how to perfectly cook ribeye, top sirloin, strip steak, or tenderloin filet using a cast iron skillet and oven.


Ingredients

Scale
  • 2 steaks (ribeye, top sirloin, strip steak, or tenderloin filet, about 1 inch in thickness)
  • Coarse salt
  • Fresh cracked black pepper
  • 12 tbsp vegetable or avocado oil (for cooking)
  • 1 tbsp unsalted butter

Instructions

  1. Take the steaks out of the refrigerator about 30-45 minutes before cooking. Cold meat will seize when it hits high heat suddenly, so for the best results, remember to let it warm up.
  2. When ready to start cooking, pat each steak dry with a paper towel all around.
  3. Season steaks generously with salt and pepper on all sides.
  4. Insert the probe for the leave-in thermometer through the side of the steak, towards the middle. Try to get it as centered as possible so it reads the temperature of the very center of the thickest steak.
  5. Preheat the oven to 450°F.
  6. Make sure that your cast iron skillet is seasoned well before every use. Preheat the skillet on the stove-top over medium-high heat and add a little bit of oil to the bottom.
  7. Add steaks to the hot skillet and sear for 45-60 seconds.
  8. Flip the steaks and sear for about 20-30 more seconds, then move the skillet to the oven.
  9. Once both sides have been seared, move the skillet into the pre-heated oven.
  10. Set thermometer to the desired temperature if you want it to alert you or just watch it. If you are not using a leave-in thermometer, you will need to manually take the temperature of the steak.
  11. Once steaks reach the temperature about 5 degrees away from your desired temperature, take them out of the oven.
  12. Remove the steak from the skillet immediately and let the steaks rest for about 5-10 minutes before cutting them (you can let steaks rest on the cutting board or on the plate).
  13. Add thin slices of butter to the top of each steak while it’s resting.
  14. Remember to slice against the grain.

  • Letting the steaks warm up before cooking helps achieve the desired doneness.
  • Searing the steaks properly creates a flavorful crust.
  • Using a leave-in thermometer helps ensure the steaks are cooked to the perfect temperature.
