Description
Delicious stuffed bell peppers filled with ground turkey, rice, and cheese.
Ingredients

- 4 large bell peppers (any color)
- 1 lb lean ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice or quinoa
- 1 cup tomato sauce
- 1 cup shredded mozzarella or cheddar cheese
Instructions
- Preheat oven to 375°F (190°C). Lightly spray a baking dish with nonstick spray.
- Wash the bell peppers, slice off the tops, and remove seeds. Set aside.
- In a skillet over medium heat, sauté diced onion in 1 tbsp olive oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Add ground turkey to the skillet and season with salt and pepper; cook until browned (about 6-8 minutes).
- Stir in cooked rice or quinoa and half of the tomato sauce until well combined.
- Stuff each pepper with the turkey mixture and place upright in the baking dish. Top with remaining tomato sauce and sprinkle cheese on each pepper.
- Bake for about 35 minutes, or until peppers are tender and cheese is bubbly.
Notes
- Feel free to customize with your favorite spices or herbs.
- Can substitute ground turkey with ground beef or chicken if preferred.
