- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup canned pumpkin puree (100% pure)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, cream together softened butter with granulated and brown sugars until fluffy. Add the egg and vanilla extract; mix until smooth.
- Gradually incorporate the dry ingredients into the wet mixture. Fold in the pumpkin puree gently.
- Pour the batter into the prepared dish, smoothing it out evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely before slicing into squares. Dust with extra cinnamon sugar if desired.
