Ingredients

  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin puree (100% pure)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream together softened butter with granulated and brown sugars until fluffy. Add the egg and vanilla extract; mix until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture. Fold in the pumpkin puree gently.
  5. Pour the batter into the prepared dish, smoothing it out evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool completely before slicing into squares. Dust with extra cinnamon sugar if desired.
