Ingredients

  • 8 oz mozzarella cheese, sliced or torn
  • 1/2 cup fresh basil leaves, chopped
  • 1 large baguette, sliced into rounds
  • 1/4 cup extra virgin olive oil
  • for drizzling balsamic glaze
  • 2 cloves garlic, minced
  • salt, to taste
  • freshly ground black pepper, to taste

Instructions

  1. Preparing the Bruschetta Base:
    • Preheat your oven to 400°F (200°C).
    • Arrange the baguette slices on a baking sheet.
    • Lightly drizzle olive oil over the slices and bake for 5-7 minutes until golden brown. Remove and let cool.
  2. Preparing the Topping:
    • In a bowl, combine halved cherry tomatoes, chopped basil, minced garlic, salt, and pepper. Mix well.
    • Let the mixture sit for 10 minutes to allow the flavors to meld.
  3. Assembling the Wreath:
    • Arrange the toasted baguette slices in a circular wreath shape on a large serving platter.
    • Place a slice or piece of mozzarella on each slice of baguette.
    • Spoon the tomato-basil mixture evenly over each mozzarella-topped slice.
  4. Finishing Touches:
    • Drizzle balsamic glaze over the entire wreath.
    • Garnish with a few additional basil leaves for decoration.

  • For extra flavor, you can rub the toasted bread with a cut clove of garlic before adding the toppings.
  • Opt for high-quality mozzarella for the best taste and texture.
  • If you cannot find balsamic glaze, you can reduce balsamic vinegar over low heat until it’s syrupy.
