Ingredients

- 2 lbs beef chuck roast
- 4 cups fresh baby spinach
- 1 cup long-grain white rice
- 1 cup Korean BBQ sauce
- 4 garlic cloves (minced)
- 1-inch piece ginger root (grated)
- 2 tsp sesame oil
- 4 green onions (chopped)
- 3 cups beef broth
Instructions
- Prepare your ingredients: Mince garlic, grate ginger, and chop green onions.
- Sear the beef in a hot skillet for 3-4 minutes per side until browned.
- Add the seared beef to the slow cooker along with garlic, ginger, BBQ sauce, spinach, rice, broth, and sesame oil. Mix gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
- Stir in chopped green onions about 20 minutes before serving.
- Fluff the rice and serve warm.
Notes
- For added flavor, you can marinate the beef in BBQ sauce overnight.
- This dish pairs well with steamed vegetables.
