- 3 tbsp extra virgin olive oil

- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the chopped carrots, parsnips, and onion.
- Drizzle the olive oil over the vegetables, then add minced garlic, cumin, cinnamon, salt, and pepper. Toss until evenly coated.
- Roast in the preheated oven for 30-35 minutes, stirring halfway through until golden brown and tender.
- Remove from the oven and toss with freshly chopped herbs before serving.
Notes
- For extra flavor, add a pinch of cayenne pepper for heat.
