Description

This roasted carrots and parsnips dish is a delicious and healthy side, perfect for any meal.


Ingredients

  • 3 medium parsnips, peeled and chopped (about 2 cups)
  • 3 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the chopped carrots, parsnips, and onion.
  3. Drizzle the olive oil over the vegetables, then add minced garlic, cumin, cinnamon, salt, and pepper. Toss until evenly coated.
  4. Roast in the preheated oven for 30-35 minutes, stirring halfway through until golden brown and tender.
  5. Remove from the oven and toss with freshly chopped herbs before serving.
