Description

A delicious mango cream layered cake that combines the sweetness of ripe mangoes with a light and fluffy cake.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups fresh mango, diced
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Extra diced mango for topping
  • Fresh mint leaves (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Prepare Cake Batter: In a mixing bowl, cream together the softened butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. In another bowl, sift together the flour and baking powder. Add this mixture alternately with milk to the creamed mixture, starting and ending with the flour.
  3. Bake the Cake: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  4. Prepare Mango Cream Filling: Beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold in the diced mango.
  5. Assemble the Cake: Place the first cake layer on a serving plate. Spread a generous amount of mango cream on top. Repeat with the second layer. Place the third layer on top and cover the top with mango cream as well.
  6. Decorate: Arrange extra diced mango on top. Garnish with fresh mint leaves if desired.

Notes

  • Use ripe mangoes for the best flavor.
  • The cake layers can be baked a day ahead and stored in the refrigerator, wrapped in plastic.
  • Ensure cakes are completely cool before assembling to prevent the cream from melting.
  • For added flavor, brush layers lightly with mango juice before adding cream.
