- 1 cup balsamic vinegar
- ½ cup fig jam
- 2 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Pat chicken breasts dry with paper towels.
- In a medium bowl, mix balsamic vinegar and fig jam until smooth.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for about 5 minutes on each side until golden brown.
- Season chicken with salt, pepper, and thyme while searing.
- Pour the balsamic fig mixture over the chicken in the skillet, ensuring even coating.
- Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
