Description

Delicious no-bake peanut butter oatmeal balls packed with flavor and perfect for a quick snack.


Ingredients

Scale
  • 3 cups quick oats
  • 1 cup creamy peanut butter (I love Skippy)
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt (see note 1)
  • 1/2 cup miniature M&M’s
  • 1/4 cup + 2 tablespoons mini chocolate chips

Instructions

  1. Combine all the ingredients in a very large bowl.
  2. Using a hand mixer on low speed, beat until a thick mixture is formed. (Or do this in a stand mixer.) See note 2.
  3. Use a 1-tablespoon measuring spoon or 1-1/2 tablespoon cookie scoop to portion out the dough and tightly roll into balls (see note 3).
  4. Once rolled, place in the fridge (on a parchment paper-lined plate or tray so they don’t stick) to firm up for about 30 mins to an hour, then transfer to an airtight container.

Notes

  • Note 1: Fine sea salt enhances the flavor but can be adjusted according to taste.
  • Note 2: Beating in a stand mixer may yield a smoother mixture.
  • Note 3: Ensure to tightly roll the dough to achieve the best shape.
