Delicious no-bake peanut butter oatmeal balls packed with flavor and perfect for a quick snack.
Ingredients

- 3 cups quick oats
- 1 cup creamy peanut butter (I love Skippy)
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt (see note 1)
- 1/2 cup miniature M&M’s
- 1/4 cup + 2 tablespoons mini chocolate chips
Instructions
- Combine all the ingredients in a very large bowl.
- Using a hand mixer on low speed, beat until a thick mixture is formed. (Or do this in a stand mixer.) See note 2.
- Use a 1-tablespoon measuring spoon or 1-1/2 tablespoon cookie scoop to portion out the dough and tightly roll into balls (see note 3).
- Once rolled, place in the fridge (on a parchment paper-lined plate or tray so they don’t stick) to firm up for about 30 mins to an hour, then transfer to an airtight container.
Notes
- Note 1: Fine sea salt enhances the flavor but can be adjusted according to taste.
- Note 2: Beating in a stand mixer may yield a smoother mixture.
- Note 3: Ensure to tightly roll the dough to achieve the best shape.
