Description

A hearty and savory Shepherd’s Pie made with ground meat, mixed vegetables, and creamy mashed potatoes.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 pounds ground beef or lamb
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 cups potatoes, peeled and diced
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Add ground beef or lamb to the skillet, breaking it apart and cooking until browned.
  4. Stir in the mixed vegetables and cook for about 5 minutes.
  5. Add tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary, then simmer for about 10 minutes until thickened. Season with salt and pepper.
  6. Meanwhile, boil diced potatoes in a large pot until tender, about 15 minutes. Drain and mash with milk and butter; season with salt and pepper.
  7. Spread the mashed potatoes over the meat filling in a baking dish, adding cheese if desired.
  8. Bake for 20-25 minutes until the top is golden brown and filling is bubbling.
  9. Allow to cool for a few minutes before serving.

Notes

  • For a vegetarian option, replace the meat with lentils or additional vegetables.
  • Feel free to add your favorite herbs or spices for extra flavor.
