A hearty and savory Shepherd’s Pie made with ground meat, mixed vegetables, and creamy mashed potatoes.

- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 pounds ground beef or lamb
- 2 cups mixed vegetables (carrots, peas, corn)
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 cup beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 cups potatoes, peeled and diced
- 1/2 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C) and heat olive oil in a large skillet over medium heat.
- Add the diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
- Add ground beef or lamb to the skillet, breaking it apart and cooking until browned.
- Stir in the mixed vegetables and cook for about 5 minutes.
- Add tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary, then simmer for about 10 minutes until thickened. Season with salt and pepper.
- Meanwhile, boil diced potatoes in a large pot until tender, about 15 minutes. Drain and mash with milk and butter; season with salt and pepper.
- Spread the mashed potatoes over the meat filling in a baking dish, adding cheese if desired.
- Bake for 20-25 minutes until the top is golden brown and filling is bubbling.
- Allow to cool for a few minutes before serving.
Notes
- For a vegetarian option, replace the meat with lentils or additional vegetables.
- Feel free to add your favorite herbs or spices for extra flavor.
