Description

A flavorful Cajun dish featuring smoked sausage, rice, and vegetables.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound (450 g) smoked sausage, sliced (Andouille or kielbasa)
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 ½ cups chicken broth
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt (optional, taste first)
  • 1 cup frozen peas or corn (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook 3–4 minutes until lightly browned. Remove and set aside.
  3. In the same skillet, sauté onion, bell pepper, and celery for 4–5 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in rice, Cajun seasoning, smoked paprika, salt, and pepper. Cook 1–2 minutes to toast the rice slightly.
  6. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer 15–18 minutes, until rice is tender and liquid is absorbed.
  7. Stir in cooked sausage and peas or corn (if using). Cook 2–3 minutes until heated through.

Notes

  • For a spicier dish, add more Cajun seasoning.
