Description

A delightful cake layered with fresh raspberries and orange flavor, perfect for celebrations.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, room temperature
  • 4 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tsp vanilla extract
  • 1 ¼ cups fresh raspberries
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for cream)
  • Orange food coloring (optional)
  • Fresh raspberries and orange slices for garnish

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.

  3. Cream Butter and Sugar: In a large bowl, use a mixer to beat the butter and granulated sugar until light and fluffy, about 3-4 minutes.

  4. Add Eggs and Flavor: Add eggs one at a time, beating well after each addition. Mix in the vanilla extract, orange juice, and orange zest.

  5. Combine and Add Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Bake the Cake Layers: Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool for 10 minutes in pans, then turn out onto wire racks to cool completely.

  7. Make the Cream Filling: In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in fresh raspberries gently.

  8. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of the raspberry cream filling on top. Repeat with the second and third layers.

  9. Decorate: If desired, add a few drops of orange food coloring to any remaining cream and use it to frost the sides of the cake. Garnish with fresh raspberries and orange slices.

Notes

  • Ensure that all ingredients are at room temperature for best results.
  • Gently fold in raspberries to avoid crushing them and creating a pink cream.
  • For an extra orange flavor, consider adding a few drops of orange extract in the cake batter.
  • The cake can be baked a day in advance to save time; just wrap the layers in plastic wrap and store at room temperature.
