Instructions

  1. Preparing the Crust: Preheat oven to 325°F (165°C). In a medium bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow to cool.
  2. Making the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until smooth. Add sugar and continue to beat until creamy. Beat in eggs, one at a time, ensuring each is fully incorporated before adding the next. Add vanilla extract and mix. Gently fold in the drained crushed pineapple.
  3. Baking the Cheesecake: Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake in preheated oven for 55-60 minutes until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for one hour. Refrigerate for at least 4 hours or overnight.
  4. Adding the Topping: Just before serving, arrange fresh pineapple slices on top of the cheesecake. Drizzle with caramel sauce. If desired, prepare whipped cream by beating heavy cream, powdered sugar, and vanilla extract until soft peaks form. Add as decoration.
