Description

Deliciously marinated chicken kabobs with vibrant vegetables and pineapple, perfect for grilling.


Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 cup pineapple chunks, fresh or canned
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon lime juice
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a medium-sized bowl, whisk together the soy sauce, honey, olive oil, minced garlic, grated ginger, lime juice, and black pepper until well combined.
  2. Add the chicken cubes to the marinade and stir to coat them evenly. Cover and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken, pineapple chunks, bell peppers, and onion onto the skewers, alternating the ingredients.
  6. Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
  7. Remove from the grill and let them rest for a few minutes before serving.
  8. Serve hot, drizzled with any remaining marinade.

Notes

  • For best results, marinate the chicken overnight.
  • Feel free to add other vegetables like zucchini or mushrooms for variety.
