Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- Mix Dry Ingredients: In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, and red food coloring until well combined.
- Combine Both Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake the Cake: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare Whipped Cream Topping: While the cake is baking, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Keep refrigerated until ready to use.
- Cool the Cake: Once baked, allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Assemble the Cake: Once the cake is completely cooled, spread the whipped cream on top. Decorate with mixed berries.
- Drizzle (Optional): If desired, drizzle berry sauce over the top for extra flavor.
