Description

A deliciously moist and vibrant red velvet cake topped with mixed berries and whipped cream.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons red food coloring
  • 1 cup mixed berries (such as raspberries, blackberries, and blueberries) for topping
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Berry sauce for drizzle (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Mix Dry Ingredients: In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, and red food coloring until well combined.
  4. Combine Both Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Bake the Cake: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare Whipped Cream Topping: While the cake is baking, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Keep refrigerated until ready to use.
  7. Cool the Cake: Once baked, allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  8. Assemble the Cake: Once the cake is completely cooled, spread the whipped cream on top. Decorate with mixed berries.
  9. Drizzle (Optional): If desired, drizzle berry sauce over the top for extra flavor.

Notes

  • Ensure all ingredients are at room temperature before starting.
  • You can substitute the buttermilk with regular milk mixed with 1 tablespoon of vinegar or lemon juice.
  • Adjust the sugar in the whipped cream according to your taste preference.
  • To intensify the berry flavor, gently crush some of the berries for the topping.
