Ingredients
- 1 package puff pastry sheets, thawed if frozen
- 1/2 cup pomegranate seeds, for garnish
- 1 cup feta cheese, crumbled

- 1/4 cup fresh parsley, chopped
- 1/2 cup walnuts, chopped
- 1 tablespoon honey (optional for added sweetness)

Roll out the puff pastry sheets on a lightly floured surface. Cut the pastry into large circles using a cookie cutter or a small bowl. Use a smaller cutter to remove the center, forming a ring shape.

Place the pastry rings on the prepared baking sheet. Brush the tops lightly with olive oil to enhance browning.

Bake in the preheated oven for 15-20 minutes or until golden brown and puffed.

While the pastry is baking, mix together the chopped parsley, crumbled feta, and walnuts in a small bowl. If desired, drizzle a bit of honey over the mixture and season with salt and pepper to taste.
