  • 1/2 cup walnuts, chopped
  • 1 tablespoon honey (optional for added sweetness)
  • 1 teaspoon sea salt, to taste
  • 1/2 teaspoon black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Roll out the puff pastry sheets on a lightly floured surface. Cut the pastry into large circles using a cookie cutter or a small bowl. Use a smaller cutter to remove the center, forming a ring shape.

  3. Place the pastry rings on the prepared baking sheet. Brush the tops lightly with olive oil to enhance browning.

  4. Bake in the preheated oven for 15-20 minutes or until golden brown and puffed.

  5. While the pastry is baking, mix together the chopped parsley, crumbled feta, and walnuts in a small bowl. If desired, drizzle a bit of honey over the mixture and season with salt and pepper to taste.

  6. Once the pastry rings are done, remove them from the oven and let them cool slightly. Top each ring with a generous amount of the feta mixture. Sprinkle pomegranate seeds over the top for a burst of color and flavor.
