Description
Delicious slow cooker Italian beef sandwiches made with tender chuck roast and melted provolone cheese.
Ingredients

- 3–4 pounds chuck roast
- 4 cups low-sodium beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 4 cloves garlic, minced
- 1 large yellow onion, thinly sliced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper, to taste
- 8 slices provolone cheese
- 4 hoagie rolls or French sandwich rolls
- 2 tablespoons butter (optional, for toasting rolls)
Instructions
- Season the chuck roast generously with salt and pepper. Optional: sear the meat in a skillet until browned on all sides.
- Place sliced onions and garlic in the bottom of the slow cooker.
- Add the roast on top, then pour in beef broth, Worcestershire sauce, and soy sauce. Add thyme and bay leaf.
- Cover and cook on low for 8 hours or on high for 4–5 hours, until the beef is fork-tender.
- Remove the roast and shred using two forks. Discard excess fat.
- Strain the broth to remove solids if desired, reserving it for au jus.
- Slice rolls, optionally butter them, and toast until golden.
- Pile shredded beef onto rolls and top with provolone cheese.
- Melt the cheese under a broiler or in the oven until bubbly.
- Serve sandwiches hot with a side of warm au jus for dipping.
Notes
- For a spicier kick, add sliced jalapeños to the sandwiches.
- This recipe can easily be doubled for a larger crowd.
