Description

A delicious and easy recipe for vegan and non-vegan sourdough French toast.


Ingredients

Scale
  • 1 cup whole milk (or plant-based milk for dairy-free version)
  • 2 1/2 tablespoon chickpea flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoon sugar
  • 1 teaspoon cinnamon powder (or ground cinnamon)
  • 1 tablespoon flax meal
  • 1 pinch salt
  • 4 slices sourdough bread (slightly stale works best)
  • 1 tablespoon unsalted butter (for toasting or coconut oil for plant-based)
  • maple syrup (for serving)
  • powdered sugar (for serving)
  • fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Make the batter for the sourdough French toast: Into a wide bowl add milk, followed by chickpea flour, baking powder, cinnamon powder, vanilla extract, salt, sugar, and flax meal. Now grab a whisk and mix everything until a homogenous mixture is formed.
  2. Microwave the batter: Take the bowl of mixture and microwave for 30-40 seconds or until the mixture becomes slightly thick. Heat will activate the starch in the batter. Give it a quick whisk after microwaving.
  3. Soak the bread in the batter: Now take a slice of the sourdough bread and place it in the French toast batter. Let it sit in the batter for 10-15 seconds and then flip and soak on the other side.
  4. Toast the soaked sourdough slices: Heat a skillet on medium heat and smear with some butter. Now, place the soaked sourdough bread on the skillet. Use a skillet large enough to accommodate two slices at once.
  5. Let it toast for 2-3 minutes on low to medium heat. Then flip and let it toast on the other side for the same time or until it turns golden brown.
  6. When done, remove onto a plate and repeat with remaining slices. Serve the sourdough French toast with powdered sugar, fresh berries, maple syrup, or butter.

Notes

  • This recipe can be easily modified for a dairy-free version by using plant-based milk and coconut oil.
  • For best results, use slightly stale sourdough bread.
