A delicious and easy recipe for vegan and non-vegan sourdough French toast.

- 1 cup whole milk (or plant-based milk for dairy-free version)
- 2 1/2 tablespoon chickpea flour
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 tablespoon sugar
- 1 teaspoon cinnamon powder (or ground cinnamon)
- 1 tablespoon flax meal
- 1 pinch salt
- 4 slices sourdough bread (slightly stale works best)
- 1 tablespoon unsalted butter (for toasting or coconut oil for plant-based)
- maple syrup (for serving)
- powdered sugar (for serving)
- fresh berries (strawberries, blueberries, raspberries)
Instructions
- Make the batter for the sourdough French toast: Into a wide bowl add milk, followed by chickpea flour, baking powder, cinnamon powder, vanilla extract, salt, sugar, and flax meal. Now grab a whisk and mix everything until a homogenous mixture is formed.
- Microwave the batter: Take the bowl of mixture and microwave for 30-40 seconds or until the mixture becomes slightly thick. Heat will activate the starch in the batter. Give it a quick whisk after microwaving.
- Soak the bread in the batter: Now take a slice of the sourdough bread and place it in the French toast batter. Let it sit in the batter for 10-15 seconds and then flip and soak on the other side.
- Toast the soaked sourdough slices: Heat a skillet on medium heat and smear with some butter. Now, place the soaked sourdough bread on the skillet. Use a skillet large enough to accommodate two slices at once.
- Let it toast for 2-3 minutes on low to medium heat. Then flip and let it toast on the other side for the same time or until it turns golden brown.
- When done, remove onto a plate and repeat with remaining slices. Serve the sourdough French toast with powdered sugar, fresh berries, maple syrup, or butter.
Notes
- This recipe can be easily modified for a dairy-free version by using plant-based milk and coconut oil.
- For best results, use slightly stale sourdough bread.
