This cornbread is a delicious treat with a kick from jalapeños and a moist texture from buttermilk.

- 1 tbsp baking powder

- 1 tsp salt
- 1 tsp sugar
- 2 eggs (large)
- 1 cup buttermilk

- 1 cup corn kernels
- 2 jalapeños (diced)
Instructions
- Preheat oven to 375°F (190°C) and grease baking dish.
- Whisk dry ingredients together in a large bowl.
- Mix eggs, buttermilk, and melted butter in a separate bowl.
- Combine wet and dry ingredients until just mixed.
- Fold in jalapeños and corn.
- Pour batter into prepared dish and bake for 25–30 minutes.
- Cool slightly before slicing and serving.
