Description

A delicious creamy dish featuring cooked chicken and fresh spinach.

Ingredients

Scale
  • 2 cups cooked chicken, diced
  • 45 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat, adding olive oil and waiting until it shimmers with a fruity aroma.
  2. Add minced garlic to the hot oil, stirring constantly for about 30 seconds until it becomes fragrant and slightly golden.
  3. Toss in the diced cooked chicken, spreading it out in the skillet. Let it cook for 2-3 minutes until it starts to develop a slight golden edge and is heated through.
  4. Pour in the heavy cream, gently stirring to combine with the garlic and chicken. Bring the mixture to a gentle simmer, watching for slight bubbling and a velvety appearance forming in the sauce.
  5. Add a squeeze of fresh lemon juice and stir; this brightens the creamy sauce and enhances the flavors.
  6. Gradually add the fresh spinach a handful at a time, stirring until each batch wilts and turns vibrant green, about 2-3 minutes total.
  7. Stir in freshly grated Parmesan cheese, then season with salt and pepper, tasting and adjusting until the sauce is creamy, flavorful, and well-balanced.
  8. Cook for another minute, ensuring everything is heated through and the sauce is glossy, coating the chicken and spinach evenly.
  9. Remove from heat and serve immediately, garnished with additional Parmesan or lemon if desired, alongside rice, pasta, or crusty bread.

Notes

  • This dish can be made with leftover chicken or freshly cooked chicken.
  • For a dairy-free option, use coconut milk instead of heavy cream.
