Description
A delicious creamy dish featuring cooked chicken and fresh spinach.
Ingredients
Scale
- 2 cups cooked chicken, diced
- 4–5 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon lemon juice
- 2 tablespoons Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat, adding olive oil and waiting until it shimmers with a fruity aroma.
- Add minced garlic to the hot oil, stirring constantly for about 30 seconds until it becomes fragrant and slightly golden.
- Toss in the diced cooked chicken, spreading it out in the skillet. Let it cook for 2-3 minutes until it starts to develop a slight golden edge and is heated through.
- Pour in the heavy cream, gently stirring to combine with the garlic and chicken. Bring the mixture to a gentle simmer, watching for slight bubbling and a velvety appearance forming in the sauce.
- Add a squeeze of fresh lemon juice and stir; this brightens the creamy sauce and enhances the flavors.
- Gradually add the fresh spinach a handful at a time, stirring until each batch wilts and turns vibrant green, about 2-3 minutes total.
- Stir in freshly grated Parmesan cheese, then season with salt and pepper, tasting and adjusting until the sauce is creamy, flavorful, and well-balanced.
- Cook for another minute, ensuring everything is heated through and the sauce is glossy, coating the chicken and spinach evenly.
- Remove from heat and serve immediately, garnished with additional Parmesan or lemon if desired, alongside rice, pasta, or crusty bread.
Notes
- This dish can be made with leftover chicken or freshly cooked chicken.
- For a dairy-free option, use coconut milk instead of heavy cream.
