- 1/4 cup mayonnaise

- 1 teaspoon lemon juice

Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare Potatoes: Wash and scrub potatoes thoroughly. Cut each potato into wedges.
- Season Wedges: In a large bowl, toss the potato wedges with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
- Bake: Arrange the seasoned wedges in a single layer on the prepared baking sheet. Bake for 30-35 minutes, flipping halfway, until golden brown and crispy.
- Prepare Dip: In a small bowl, combine sour cream, mayonnaise, ketchup, lemon juice, salt, and pepper. Mix until smooth. Adjust seasoning as needed.
- Serve: Once the wedges are done, remove from oven and let cool slightly. Serve warm with the creamy dip on the side. Garnish with fresh parsley if using.
Notes
- For extra crunch, soak the potato wedges in cold water for 30 minutes before seasoning. This removes excess starch.
- Experiment with different spices like cayenne pepper or rosemary for a unique flavor.
