- 4 legs turkey (about 2 lbs)
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 cup hickory or mesquite wood chips (soaked in water)
Instructions
- Preheat your smoker to 225°F (107°C).
- Pat the turkey legs dry and rub them with olive oil.
- In a bowl, mix paprika, garlic powder, salt, and pepper. Generously coat the turkey legs with the spice rub.
- Place the soaked wood chips in the smoker and arrange the seasoned turkey legs on the grates.
- Smoke for approximately 3 hours or until the internal temperature reaches 165°F (74°C).
- Let the turkey legs rest for at least 15 minutes before serving.
